Meal: The Greens recipe for soba noodles with french lentils, swiss chard, and goat cheese.

Back Story: This is a great vegetarian recipe~ satisfying and easy. The French lentils are beautiful and have a great flavor when combined with the goat cheese.

Method: Boil water for the pasta. Wash the lentils. Toss out any weird ones that float to the top during washing. Cover with 1-2 inches of water, bring to a boil and let cook for 15 minutes. Don’t overcook! Strain but reserve liquid for the sauce. Toss in a bit of olive oil. Set aside.

Sauté 2-3 chopped cloves garlic for 2 mins in olive oil. Add 2 chopped carrots and some chopped leeks or ramps. I used 4 ramps in this recipe. Add 1/2 cup of the drained lentils. Toss for 1-2 mins. Add washed chopped chard and simmer for 2-3 minutes. Add lentil liquid and simmer til veggies are tender.

Cook buckwheat pasta for 5 minutes. Add to the veggies. Toss in chopped parsley, parmesan and crumbled goat cheese. Enjoy with a nice Cotes de Rhone.
