Meal: Yellow cauliflower curry

Back Story: Our basket this week included a giant head of yellow cauliflower. Seriously, so giant it would not fit in our fridge. We had to cook it ASAP. I commented that it already looked curried but that we should curry it anyway.

Method: Sauté chopped onion, garlic, red bell pepper, jalapeño, curry spice and garam masala in hot olive oil for 10 minutes. Then add cauliflower, a can of drained chick peas, large can of diced tomatoes and a can of low fat coconut milk. Stir and cook covered over medium heat for 1 hour or until things are tender. Add fresh chopped cilantro at the end. We had black rice with it, which was perfect.
