Dish: No-Fuss Grilled Chicken

Method: Rinse the organic, free-range, hormone-free bird in water, pat dry with a paper towel, and position on a cutting board back side up. With your MF heavy-duty kitchen scissors, cut the spine out and then sever the breast bone so that the bird will lay flat. Season the flesh side as desired (I used dry BBQ dry rub mix tonight) and position bone side down on a hot grill. Cover and close the air vents to lower cooking temp. Let cook for 20 minutes. No peeking, prodding or flipping. This is the “no fuss” part. You will think its burning but, believe me, it’s not (see pictures below for real proof). At T=20 minutes, rotate the bird. DO NOT FLIP OVER. Let go another 20-30 minutes depending on how big the bird is, remove and check temp. You want the temp to be 160F. This method usually results in tender, fall-off-the-bone chicken.
