Meal: Tofu but balls, IKEA cream sauce, egg noodles, and steamed broccoli

Back Story: Sometimes, we do cook without meat. This is an extremely versatile recipe for tofu. The tofu balls go with anything: cream, Rao’s, or curry sauces all work well. Great use of left-over brown rice too. Tonight, we made a light “cream” sauce to go in top.

Method: In a cuisinart or blender, combine ground almond, rice, strained tofu, soy sauce, & breadcrumb into a thick paste. With an ice cream scoop, dish out balls onto a foil-lined pan sprayed with PAM. Roll, bake for 15 mins at 350, turning once. Steam broccoli and cook pasta. While that’s cooking, make the IKEA cream sauce. I used fat-free milk instead of cream–works just fine and is lighter. Bring to a boil and cook til it gets thick enough to coat the back of a spoon.

Plating: Toss pasta with a bit of the sauce. Plate pasta, broccoli, balls on top of pasta and sauce on that. We had these with Ligonberry jam to make it a la IKEA. Enjoy!!
